To rehydrate dried mushrooms, soak them in hot (not boiling) water for 20-30 minutes, strain off the liquid (save the liquid and add to your dish for an added flavour boost) and use as you would fresh mushrooms. Alternatively, you can toss dried mushrooms directly into your soup or stock as you are cooking and they will rehydrate and infuse your dish.
